Jury selection for the trial against Drew Anthony Nickason began on Monday.
Nickason, 26, is charged with aggravated assault with a deadly weapon, evading arrest and violation of parole.
Court documents indicate that Nickason got into a fight with another man at Buffalo Wild Wings (5107 West Wadley Avenue) in Midland on December 28, 2011.
During the scuffle, Nickason reportedly slashed the victim on the inner bicep of his left arm.
Nickason and another man -- 22-year-old Dallas Dean Decker -- reportedly tried to run away after the fight.
However, police quickly caught up to both men and arrested them.
The Midland County District Attorney's Office reportedly considers the stabbing to be racially motivated, and prosecutors are allegedly treating the trial as an example of a hate crime.
As of Monday, Nickason was being held in the Midland County Detention Center on $21,000 bond.
